The ubiquitous Cheddar of course, but stretch yourselves a little and try Colby, Stilton, Double Gloucester, Red Leicester and the incomparable Huntsman (which is a layered Stilton and Double Gloucester, and among the great gastronomic treats.)

Brought us Cheddar cheese, which can be eaten alone, on sandwiches, with crackers, shredded in tacos, and much more.

I have had some spectacular country Cheddar in Scotland. The U.K. is home to Stilton, Wensleydale and many others mentioned in Monty Python's Cheese Shop sketch.
