 | Enkidu (37) 02/22/2004 | One of my favorite flavors, I find it useful in more things than I can list. It is a component of Bengali five-spice mixture (equal parts cumin, fenugreek, fennel, mustard seed and kalonji) which I am using to cook a crock pot roast right now as I type this ... it is also (as Twinmom points out) good with tomatoes and chicken. Try slow cooking chicken, tomatoes and onions in a pot with cumin and some pepper; this can't be beat for simple and delicious (a former student from Sri Lanka taught me this trick)

 | twinmom101 (31) 02/22/2004 | My favorite spice. I add cumin to several dishes but it always goes best with lentils and tomatoes. I buy the seeds whole and grind them in a coffee grinder before cooking. There is something so pungently satisfying with fresh ground cumin. It almost smells lemony and clean. Kala, or wild cumin is even more intense and tastes great with curried chicken. If you use cumin, try to buy it whole and grind a little at a time as it quickly goes rancid once ground up.

 | CastleBee (81) 03/22/2002 | One of my favorite seasonings cumin is what gives a lot of Mexican food its very tasty flavor. Oddly though, this spice by itself smells well…it sort of just SMELLS. But, as soon as you add it to fajitas or taco meat, it turns into something quite nice to savor.
