 | georges11 (16) 05/23/2008 | Corn tortillas lightly fried in oil stacked on top of each other like pancakes wth shredded melted longhorn cheese and home made red chili in between each one and topped with a sunny side up fried egg. Oh yeah and don't forget the ice cold lemonaid or margarita. Ahhh. I'm hungry now.

 | Molfan (57) 02/10/2006 | a 4.5. I wish we had more authentic Mexican eateries around here. I have enjoyed a well made enchilada on occasion. I like the beef version with the cheese and sauce all together. nice and tasty.

 | X Factor Z (13) 07/18/2005 | You should know that REAL Texas enchiladas...not the gringo imitation, are the best, if there isn't anything better than sharp cheese wrapped in corn tortillas,
really good with Chili instead of the usual sauce.

 | texasyankee (21) 05/24/2005 | I love these too, in fact these have been my favorite Mexican food since I was a little kid, living in Illinois. What kind of mexican does illinois serve? Probably not the best lol.
The place was called Taco Gringo lol.

 | Randyman (103) 05/07/2005 | This is something that I rarely order at a restaurant as much as I love them, but only because my wife makes'em so good. I like mine stuffed with beef and smothered in a hot red gravylike sauce and topped with olives and sour cream. UPDATE: I just thought of this because I just had this for breakfast. Take your leftover enchiladas and fry them up. Don't worry about them breaking up and falling apart, that actually helps, let them get crispy. Serve them up with some fried over easy eggs for a great breakfast.

 | helmut (16) 04/11/2005 | These are excellent when done well, but I have only had a couple of good ones eating out (both in Phoenix). I have tried making them at home and decided I prefer the machaca to just ground beef. It reminds me too much of the bad mexican food around here that's often flavored with too much salt and cumin. I also like to make a cheesy sour creme sauce that I think complimetns the hot chili sauce very well.
