My favorite spice. I add cumin to several dishes but it always goes best with lentils and tomatoes. I buy the seeds whole and grind them in a coffee grinder before cooking. There is something so pungently satisfying with fresh ground cumin. It almost smells lemony and clean. Kala, or wild cumin is even more intense and tastes great with curried chicken. If you use cumin, try to buy it whole and grind a little at a time as it quickly goes rancid once ground up.
