I just read what you wrote about Evanger's, and though you gave it a decent rating, I wanted to let you know a few things about dog food in general because I had the same questions you did until I asked my vet. As far as fatty foods, dogs require much more fat than humans in their meats, so it is okay for dogs to have a higher fat content. For example, when we cut off the fat from our food to give to our dogs, this is okay, though not suggested all the time, it's not harmful for a dog's arteries like it is in humans.
Secondly, as far as switching the foods all the time, although a dog might crave a variety, you shouldn't switch a dog's diet so often because their digestive system can't handle it. Switching a diet now and then is fine, but it must be introduced, not just switched. Evanger's offers plenty of ways to do this like mixing the 100% meats with the vegetarian meal which is one of the best ways to have a healthy dog, and if you keep a few different flavors of the game meats on hand, it's easy to offer your dog a variety.
