Like many, I grew up thinking iceberg was really the only lettuce used in salads. Then several years ago a friend of mine, who had been studying nutrition at the time, told me of the virtues of the darker green varieties of lettuce (like romaine). Since then, I have made an effort to try them out and have really grown to love and enjoy a large variety of lettuces. Years ago I remember my grandmothers making wilted lettuce. I know I liked it, but have never attempted to try it out myself.
