I always had a huge pile of raw carrot with my Sunday roast when I was still living at home with my parents. The crunch and the sweet juice of carrots are just so refreshing and yummy!
The only time I like cooked carrots is when it is whole baby carrots and I tend not to boil them for long as you lose the flavour and crunch - I just boil it enough for it to be hot and slightly tender. Gorgeous!
