Absolutely wonderful, and while I love most fruits, this is one of my favorites. A delightful crunchiness and amazing sweetness awaits all that try this fruit, and while its texture certainly is crunchy, it still retains its signature texture of flesh, much like that of a fresh plum. Choose a fruit with dark color when choosing the bing( black or red) variety, and you can rarely go wrong when buying rainier (the yellow and gold type). Rainier cherries still offer the fresh crispness of texture, while its sweetness is definitely dimmed down slightly, while retaining a fresh, unique flavor which many enjoy most furtively. It tastes more "clean", and has a frangrance all of its own, and you can rarely go wrong when picking these. Always choose fruit of a very strong flesh (squeeze the fruit to check for any softness). If there is any softness, don't purchase it. Should you want a softer cherry, you can allow it to ripen for a few days; they will be much fresher, and stay fresher longer than the soft fruit. Green stems are a plus, but not a must. Just wash, and enjoy (but watch out for the pit).
