Oh,man ! There are sevearl places in the city (NYC) where they make kickass Empenadas. There's also a traveling Empanada Lady you can probably google who does it just right at festivals and events.

A well made Burrito is one of the most satisfying meals. They can be tailored to your taste. I like some carne in mine, but have had good veggie ones or "breakfast" burritos with eggs & cheese.

Made my first empanadas last night. Of course, the listing may imply to the un-oriented that these can only be made with meat, but the combination of fillings are unlimited. I used a recipe from one of my favorite food websites, Three Guys From Miami:

Not only do they offer a number of recipes for the filling, but make an important distinction between the baked and fried versions. I went with the baked with a meat filling. The difference between the two is the pastry dough. For the baked version there is a twist that I would never have thought of: using a 2:1 ration of cream cheese to butter. Once browned in the oven (375F for 23 minutes) it produced the most astoundingly savory crust I've ever eaten.

This was all kind of impromptu. Dinner started out with a thick New York Strip steak as the protein. As good as they are, I felt I could make it more interesting and went straight to the Cubans Guys for some help. Had everything I needed and once the steak was done medium rare, I let it rest while I made the dough and the filling with the shredded New Yorker. With a chili lime hot sauce to dip it in and a cucumber and tomato salad with oil and balsamic vinegar it was a magnificent Summer dinner.

We compared three states that substantially expanded adult Medicaid eligibility since 2000 (New York, Maine, and Arizona) with neighboring states without expansions. The sample consisted of adults between the ages of 20 and 64 years who were observed 5 years before and after the expansions, from 1997 through 2007. The primary outcome was all-cause county-level mortality among 68,012 year- and county-specific observations in the Compressed Mortality File of the Centers for Disease Control and Prevention. Secondary outcomes were rates of insurance coverage, delayed care because of costs, and self-reported health among 169,124 persons in the Current Population Survey and 192,148 persons in the Behavioral Risk Factor Surveillance System."

I love Pinto Beans! They are especially good with cornbread. If you cannot find pinto beans in the bag, a very similar substitution is Cranberry beans.
