It works, barely, but the texture isn't quite right for my taste.

I've been known to make a pork shoulder chili with white beans. It's good.

Pork is a regular ingredient of many recipes. I think I have posted on RIA my recipe for Navajo Green Chili which is basically cubed pork, browned, and hot green peppers with various herbs and spices. Great.
