Never had it, but would certainly be willing to give it a try.

Personally, I tend to think beef is the only meat for chili, and am unimpressed to disgusted by attempts to substitute pork, lamb, chicken or turkey.

This is a good suggestion, and I have used it for years. The slightly wild taste of the venison comes through and gives the chili a distinctive taste. I use the venison hamburger mostly. I save the venison steaks and chops for other dishes..

I've been making my chili with venison so often for the last several years, that chili made with beef just doesn't taste quite right anymore. It's not that different from beef, but it does have a slightly different texture and taste.
