On the side, a dish of cajun style dirty rice is an excellent companion to chili. In the bowl, not so much.

Ironically enough, I just had this for lunch. I saw my grandmother yesterday, and she gave me some of her home-made chili to take home with me for lunch today. By itself, there wasn't a tremendous amount of it, but with a half cup of rice, it was a wholesome, rib-stickin' meal. I'm not a big chili aficianado, but I almost inevitably have it with rice when I do partake. When I've ordered chili in a restaurant (rare) it comes by itself in a cup or a bowl, but anybody I know who makes it from scratch uses rice as an accompaniment. Even when I have it from a can, I use rice.

There wasn't a time that my mother made chili when I was a kid that she didn't serve it with rice. It was something that she did, but I don't find myself doing as an adult. Its not a bad item to mix in with your chili, but it doesn't make or break the dish.
