I have used Via Voice and Dragon Systems. Dragon Systems is by far more flexible and responsive, easier to train and use.

Works amazingly well, as does Dragon's similar product 'Naturlly Speaking.' Excellent for people with repetitive stress injuries, or the handicapped. Someday soon, we'll all be using our keyboards less, and talking to our computers a lot more.
