California cuisine is what's known as a 'fusion' cuisine created primarily by modern chefs. Basically it's a Mediterranean style cuisine fused along with Asian and Latin American influences. Meals are made with fresh, primarily organic ingredients. Lots of fresh fruits, vegetables, lean meats and fish are served. It isn't really an 'established' cuisine in the literal sense, but you'll find plenty of restaurants serving this type of food in wine producing regions in CA, the Bay Area, and in some of the more upscale areas of LA.

I'm from California. I've lived here for fifty years and I still don't know what California Cuisine is, nor can anyone tell me. Every cookbook I've ever read on California Cuisine has Mexican, Italian and French recipes, so I'm confused. Nobody I know cooks it at home, much less know what it is. If you ask me the prominent and original cooking of California is Mexican and Spanish and Native American.

American Mediterranean. Generally healthy cooking with influences from Italy and Spain and the Pacific Rim, with lots of fresh fruit and vegetables. Not bad.
