Find a nice stand and cut the light green ones. Soak then cut off the spines. Blanch and cook as you would any other vegetable. Some folks don't blanch but peel before they eat it. It also makes a good jelly. It is a cactus, for you RIA members, thirsting for knowledge, if you don't know what a prickly pear is.
