Also fondly referred to as Chef Paul or K-Paul for his line of seasoning blends. Chef Paul acquired his love of Louisiana cooking by using fresh ingredients and what was available from his mother at a very young age. For everyone who has ever eaten a blackened fish sandwich can remember Chef Paul for this, along with the technique of doing it while smoking up your kitchen, he created it. The one cookbook of his that I do own is yellow and worn from years of use. In recent years he has pared down his recipes that were known for their high fat and sugar content as well as his well-known girth. He is a living legend in Louisiana and to those who love Cajun and Creole cooking.
