I would have conversation about the language spoken. Find out the translation of common words like hello, love, good bye and thank you. Find out important words to ask for directions, ordering food and drinks. I would also asked the people the non touristy place to visit. I find it very challenging and useful to be able to know a little of their culture through their language.

Well, obviously if I'm in a foreign country and don't speak the language I won't be having very many conversations at all.

Use sign language and you're all set...well, not really. Learn the language before you go is your safest bet.
