Technically, they're a fungus, not a vegetable.

There are a lot of varieties, and several have a surprising piquancy.

Raw mushrooms are great on a salad, and can taste amazing if they are sauteed correctly. Also don't sleep on fried mushrooms as another way of eating them.

Well, these aren't technically vegetables, but what-the-hey, they're great. It's sort of difficult to give a rating for mushrooms, since there are so many varieties, but the standard fare are delish!

what is a steak without mushrooms on top? edit:castlebee: My father used to go mushroom hunting when I was a kid everytime there was a rain, and boy those mushrooms were so good! nothing better than fresh picked mushrooms.

I LOVE mushrooms. Mushrooms sauted with onions and bell bepper and served over a medium rare steak, served with a baked potato smothered in the same. Get the picture?

One of my favorite vegtables. They come in different varieties and are quite versatile. I like them raw, I love them sauted, and used in various dishes, omlettes, salads, or on top of hamburgers, steaks, pizza and I love cream of mushroom soup.

Yeah, technically the mushroom's a fungus, I know, it sounds gross, but that's not going to stop me from eating them. I definately love the big portabella mushrooms, they're so tasty, great on burgers. It's something that a lot of people don't like, it's a taste that some people can't stand, but if you're up to it, it's worth a shot.

I gotta rip on the shrooms. It's not that they necessarily have a terrible taste, but that the consistency, the kind of slimy skin, makes me want to gag. Not bad when stuffed though.

Castlebee -- Yum! - You are making me hungry again. --Mushrooms sauted in wine or olive oil--mmm- with a little garlic powder, salt and pepper too--ooh! must stop. As a vegetarian I especially cherish mushrooms for their "meatiness". -Excellent in vegetarian lasanges and stews as well as stuffed and broiled or on pizza. I also appreciate mushroom gravy- especially at Christmas and Thanksgiving dinners- when I use in on mashed potatoes and the sauted tofu slices that serve as my "turkey". --Not only delicious- but my meal looks more like what everyone else is eating so it makes it easier not to offend anyone yet still adhere quietly to my beliefs.

I once thought of mushrooms as simply a way to perk up vegetable dishes, casseroles and salads. Over the years I have also found are excellent eaten alone. The most common preparation of course would be to batter and fry them. But, try sautéing them in butter and some red wine sometime - very nice! Or, put a little flavored olive oil on some sliced Portobello mushrooms and toss them on the grill with some other veggies. I have enjoyed many varieties but to me none compares to the wild morels that can be found for only a very short time each year. These are a true delicacy to be happily gathered, fried and savored each spring.
