Nachos with regular melted cheese? Ho-hum. Nachos with grade A melted cheddar cheese, along with grilled beef, diced tomatoes and onions, with some cilantro and topped with olives, sour cream and jalapenos galore? FANTASTIC!

If we're are talking about the Nachos that you get at the movies, no. The Nachos that I like have thick chunks of Carnitas (roasted or deep fried pork)or Carne Asada (grilled beef) or any number of meats. Smothered in a red or green chile sauce and topped with melted cheese and Jalapenos. Terrific beer food. Bet you can't have just one.

Nachos are a highly addictive food for me. As long as there is any semblance of dip remaining, I will be scraping the bowl with my tortilla chip for more.
