 | mobilebuzz (14) 12/08/2006 | Very few meals surpass enjoying fresh ceviche under a palapa on a warm Mexican beach. Shrimp is my favorite, but I also appreciate fish ceviche. Some of the differences I've noticed between Mexican and Peruvian Ceviche are 1) the fish/shrimp in Mexican ceviche is usually more cured, and 2) the pico de gallo or just chile verde that comes with Mexican ceviche. Both types are tasty enought for me, though.

 | Randyman (101) 05/07/2005 | During the summer months nothing is better or more cooling than Ceviche. Ceviche is raw fish that is cooked with lime or lemon but is essentially still raw (there is no raw fish taste), and mixed with chilies, onions, olives tomatoes and other ingredients. There is no one single recipe for ceviche. Serve it in a cocktail glass with crackers or chips, or more authenticly on a Tostada shell with some hot sauce.
