this is the one dish i cook the best. i grew up on fresh roasted green chile but i got this recipe from one of my sister in laws and over the years have made it my own with all fresh ingredients and one secret. i recently had some chile verde enchiladas that were great i dont know if i dare to combine them myself though

This is my specialty, both in cooking and eating. Tender chunks of pork simmered in a green chile sauce. This is a staple of New Mexico as well as Mexico.
