I still compare all Huevos Rancheros to my father's, who set the standard as far as I'm concerned. He made a meaty green chile sauce that was unbelievably good, poured it over his the eggs and topped it with melted cheese. It was the best. No thin watery sauce for this family. Lucky for my wife and kids and my brother and sister, that I learned how to make it just like my father. Lucky for them I was paying attention.
