Chili Con Carne is not a Mexican dish, but it does have it's roots in Tex Mex cooking. In the early part 1900's the Chili Queens (almost exclusively Mexican)of San Antonio would bring their pots and pans to the plazas and set up cooking stations and sell their chili to the working men, and cowboys around town. It's evolved into a unique American dish, and though many states claim to have great chili, Texas is still pretty much regarded as the king.
