Love the stuff, but you can't find it many places anymore because it isn't "authentic." But it is. It's authentic Chinese-Californian which is a cuisine which deserves respect in its own right.

Genghis is right. There's a good musical number in the '50s flick Flower Drum Song that uses chop suey as a metaphor for the melting pot. Having "Chop Suey" as a song about what it means to be American (all mixed up from different places) thus makes perfect sense.

I really like chop suey, but it is an American invention, believe it or not.
