First you gotta make a roux, and that is not too hard really. Then you have to have acquired some fresh okra, and that is more problematic depending on the season. If you can get file powder, so much better. Add sausage, other choices of veggies, tomatoes, tomato sauce, and serve over rice.I have a couple of cookbooks with good gimbo recipes.

Probably the premier dish of the Creole/Cajun cuisine, and one that I make quite well, though I'm neither Cajun or Creole. It's a soup thickened with a roux, and/or okra or file powder, and has pretty much the same ingrediants as Jambalaya. It's served over hot white rice.
