A sea-food lover's delight; plenty of good, mouth-watering choices in New Orleans, even now. Reminds me considerably of the 'mariscada' from Spain. There are such incredible possibilities here. Perhaps 'cimbrel30' could tell us.

I don't get to Creole country that much any more, but you can get good jambalaya in parts of Mississippi, Alabama, Arkansas and Texas as well as Louisana.Ready Randyman's review for the contents.

Jambalaya is a delicious creole/cajun rice dish that may incude ham, chicken, sausage, seafood, tomatoes and other vegetables. It is thought to come from the french word for ham, jambon, and the spanish word, Paella, a Spanish rice dish similar to Jambalaya. Over time, Jambon-Paella, evolved into Jambalaya. Sounds plausible.
