I love scrapple and always have a little of it each year. It is not for every taste, I am sure, but if you like fried pork sausage for breakfast, you will like scrapple.

How can anyone NOT like scrapple?!? Granted, I was born and raised in Maryland south of Amish country but it's so naturally delicious it's hard to imagine not liking it. Deep flavor-- more complex than a lot of other breakfast meats. Rappa is probably the best, though I've had some homemade Amish ones that were very good. And, contrary to popular belief, most scrapple isn't made from the nastiest parts of the big. Many recipes simply call for any old pork and cornmeal. To me, scrapple is the only breakfast meat (sausage, bacon, etc.) worth the fat and calories.

I love this stuff, Rappahannock brand being my favorite from when I lived in VA. Undoubtedly very bad for you. Loaded with fat like sausage and other breakfast meats. Has a unique but not strong flavor. Once I did find a little bit of pork skin in one piece - even had a few bristles on it! To prepare, thaw and slice into roughly 3/8th inch slices. Fry on an ungreased skillet - trust me, it will create its own grease - until well browned to crisp on both sides. I like it any way it is cooked but some really prefer it crisped on the outside. This can be served as a sandwich. Also cooked with scrambled eggs. I like it drenched in the maple syrup from pancakes or waffles. Give it a try.
