	Enkidu (37) 03/04/2007	Yum, and just in time for dinnertime. Trick on roasting beef is not too hot an oven. Singe it on the outside and then cook slowly at a relatively low heat: seals the juices in and keeps it that nice red color for rare or medium rare. Rare on the inside, nicely browned on the outside, homenade gravy (best served a little thinner than usual with Roast beef, though not as thin as Au Jus) served over all, and fresh cooked aspargus.
