Bordelaise Sauce is a classic French sauce named for the wine area of Bordeaux. The sauce is made with dry red wine, bone marrow, shallots and a rich brown sauce called demi-glace. New Orleans Sauce Bordelaise is different in that garlic instead of red wine and bone marrow. A second version is what we usually think of as Bordelaise and consists of butter, olive oil, chopped green onion, parsley, and garlic.
