I have a great recipe for Hollandaise Sauce - 1) Visit the Heart and Stroke Foundation's Web site for a list of foods to avoid if you have high Cholesterol or are at risk for a heart attack. 2) Take a half cup of every food item on the list, and slowly bring to a low boil. Serve over eggs and fatty pig meat.

Made properly, its delicious, although you can feel your arteries clogging with every bite.Made badly its usually over sweet.

If you ever have eaten Eggs Benedict you have savored the Hollandaise Sauce. This sauce is prepared by mixing egg yoke, butter, lemon and pepper and emulsifying it either by cooking or by adding an emulsifying agent. It must be stiff like whipped cream.
