It's a bit of work, but it's well worth it; wonderful texture, delicate taste.

I recently bought some special shell fish scissors that work best for me for getting to the really good pieces and I highly recommend them. Ridgewalker is right - when you get good ones you don't really need the butter. (Also, if you've ever watched that "Dangerous Catch"(?) show on cable and see what the guys who fish for these go through you'll appreciate every bite even more!)
