One of the most fascinating examples of evolutionary adaptation is the capacity of Northern European peoples to digest milk without suffering any after-effects. Adult lactose tolerance developed because Nordic peoples couldn't survive the wintertime without the steady supply of milk provided by domesticated animals. I'm green with envy every time I see people lining up at J.P. Licks in the summertime, while I stare at ice cream without being able to consume it. While science tells me that they've attained a higher stage of evolution, sometimes I'm not so sure.
