Maybe I'm just weird, but as much as I love barbecue, I'm just not a big rib fan. I'd much rather have a slab of a barbecued pork shoulder, or the same barbecued pork shoulder prepared as pulled pork. I'd even rank barbecued beef brisket ahead of ribs, even though I think pork is generally superior to beef when it comes to barbecue.

the smokier the flavor, the better!i usually like the sides that it's served with - coleslaw, sauteed veggies, cornbread, baked beans...

Quality can vary. . .but even mediocre ribs can score a four and excellent ones can ring in at five. They look easy to make but I haven't been as successful in my own kitchen/grill and would welcome any home-run recipes. Classic fare here that can be enjoyed any time of the year. (I did surprise a few party guests by serving them during the winter at a party- quite unexpected. . .)

We didn't really invent BBQ ribs. The Asians have plenty of versions of their own. But what we invented is among the most pleasurable foods in existence, when done right. The bone should slide right out of the meat clean of flesh.

How great are ribs? The best. Also you don't have to worry about Mohammedan terrorists in a rib joint.
