I'm not a big fan. I've never cared for gravy much, and I certainly hate it slobbered over everything on the plate.

Crucial. A good gravy is a chef's best friend and can salvage an otherwise mediocre meal. (You just use more than you ordinarily would.) Health Nazis who say no to gravy bewilder me.
